New Year’s Eve at Raffles Hotel Singapore

So you’re spending New Year’s Eve in Singapore, and you’re wondering where you could head to usher in the New Year. Sure you could go to one of the many New Year’s parties being held all around the island. But what if you’re looking to usher in the New Year in style and class? It doesn’t get any classier than the annual New Year’s Eve Gala Ball at Raffles Singapore.


The ball, held at the hotel’s majestic lobby also includes a 5-course dinner by the hotel’s Executive Chef, Pierre Burgade, as well as a live band and DJ before the countdown to 2016 begins.

The black tie event, held at the beautifully decorated hotel lobby, begins with butler-passed canapés alongside flutes of Billecart Salmon Brut Reserve. For a palate tickling culinary experience, the decadent 5-course dinner created by Raffles Singapore Executive Chef Pierre Burgade includes Scallops, Heirloom Beet and Leek served with Black Truffle and Ox Tail Consommé and Verbena Yuzu Pear with Cream, Yuzu Roulade and Pear Sorbet. S$698++ per adult; S$388++ per child.



If you’re looking for something a little more low-key, instead of a full-blown Gala event, we would recommend Raffles Singapore’s New Year’s Eve Bash at Long Bar Steakhouse and Long Bar (home to the iconic Singapore Sling). The bar and restaurant will host revellers as they tuck into Executive Chef Pierre Burgarde’s 4-course menu before the countdown to 2016 begins.

The meal begins with an appetiser trio featuring Pan-Fried Duck Liver, Seared Scallops, Scottish Smoked Salmon. The scallops and salmon’s sweetness perfectly complement the richness of the foie gras. Guests should also look forward to the delectable fish course of Black Cod a la ‘Meuniere’ which sees the fillet coated in flour before it is pan-fried and served alongside Macaroni with Comte Cheese and decadent shavings of Winter Truffle. The main of Omaha Prime Beef Tenderloin on the other hand, is accompanied by Ratte Mousseline, Broccolini and the creamy Bordelaise Sauce. To end the evening, Chef Pierre will present his take on the ever popular Red Velvet Cake paired with Mixed Berries and Cream Cheese Sorbet. S$198++ per adult.
